I called this Covid 19 chicken noodle soup. As a dollar general employee when I get off work there’s no meat at grocery stores so I made this buying stuff at work with my 30% employee coupon on clover valley stuff. Used 2 cans of chicken, can of carrots and mixed veggies drained (only way I could get celery in it), an onion I had at home, garlic powder not fresh, and ramen noodles. I didn’t use broth just water so I used the seasoning packs included in the noodles and added some butter. No peppers here so couldn’t use it but kept everything else the same seasoning wise. I tripled it for my family and we got 2 great dinners from it for under $5. Thank you. Having to get creative to feed my family now and this was well received.
Loved this quick, easy, and wonderfully tasty soup! I used a low sodium broth, so added in a little of the chicken flavored ramen packet for a little bit of extra flavor. The ginger and soy sauce were wonderful additions. My almost 2 year old LOVED the broth and noodles in this one and didn't want to stop slurping it up. I will definitely make this one again - Swanson broth is delicious for any chicken noodle soup base!

I was looking for a base for ramen soup and this fit the bill. I did add bbq pork and shrimp instead of chicken which was really good. When i stirred in the package of ramen noodles it didn’t look like it was enough so I added the second package. Big mistake. The recipe was correct. My mistake not the authors. The broth on this was really good with the ginger and soya sauce addition. Will be making this again.
I really like the idea of this soup. Tweaks for the next time would be: 1) hold off on the bell pepper and replace with something more traditionally Chinese, like bok choy, snow peas, etc and I would NOT boil the heck out of the veggies, but that's to each his own! 2) I added another cup of chicken broth or even water might lighten it up a bit, 3) flavor was a bit bland so I added a smidge of extra soy sauce and fish sauce and. . .hello! 4) I would leave the ramen noodles whole, more fun for the kids to slurp.
I loved ramen noodles as a kid but they became boring to me as an adult. Until I started dressing them up that is and I fell back in love with them all over again. I loved the flavor and color combo in this one and the ginger was a nice touch. Swanson broth has such deep rich flavor but the best part was how fast this all comes together. This is one I see me making often for lunches!
Very disappointing, very little to no flavor...someone did mention that using low sodium might affect it and they added some seasoning packets
